I have a beautiful friend who has waited 11 years to have a baby. That is a long time! She finally has been blessed and is preparing to be a baby mama in the next few weeks. To celebrate, her sister and mama had a baby shower! They allowed me to help a smidgen, and I made:
Baby Shower Popcorn
It was such a fun event and they had so much beautiful food. I love food that looks beautiful and tastes just as good! I am so happy for my dear friend. I have found sometimes that the longer you have to wait for something, the more grateful you are when it finally happens. I wish her the best in her new adventure!
So, onto the popcorn.
You only need a few things:
3 bags microwave popcorn, popped with kernels removed (about 24 cups popped, if you do it on your own)
16 oz. white chocolate candy melts
3-5 cups pretzels, broken
1-2 cups colored chocolate candies (I used the colored Sixlets that you can buy in nearly any color you want. You could also use M&Ms)
Food coloring (if desired)
Put popcorn and pretzels in a large bowl. Melt 12 oz of candy melts in microwave according to package directions. I put them in my microwave at 50% power for about 30 seconds and then stirred and repeated until melted. Make sure you stir in between so you don’t overheat the chocolate. (If overheated, it will seize). When they are melted and smooth, pour over popcorn mixture and stir until popcorn and pretzels are covered. If you want to add more chocolate, you can!
While still warm, lay out on a greased cookie sheet and top with chocolate candies and sprinkles. Melt remaining candy melts in microwave and add food coloring as desired (obviously, I chose pink). Drizzle this over the popcorn and candy.
The great thing about this recipe is that you can add and adjust it as you desire. Add nuts or M&Ms. Use milk chocolate to drizzle and add crushed candy canes for Christmas. There are so many variations. The only constant is the white chocolate and popcorn! If you have tried this, let me know what you think!
