My husband loves red meat, and we don’t eat very much of it at our house. I finally caved and bought some red meat and we celebrated with this recipe: beef and broccoli. It was truly simple and delicious. The meat and broccoli cook so quickly, you can have this on the table before your rice is cooked!
Beef with Broccoli
1/2 tsp. baking soda
1 tsp. sugar
1 Tbsp. cornstarch
1 Tbsp. soy sauce
2 Tbsp. vegetable oil
2 Tbsp. water
1 lb. broccoli crowns, washed and cut up
1 lb. sirloin (or flank) steak, thinly sliced
Marinate meat for at least one hour before dinner.
1/2 c. soy sauce (choose low sodium)
1/4 cup water
3 Tbsp. brown sugar
3 cloves garlic, minced
3 Tbsp. flour
1 Tbsp. rice vinegar
1 Tbsp. balsamic vinegar
3 Tbsp. oil
Put 2 Tbsp. oil in skillet. Heat over medium high heat. When the oil is hot, add broccoli and saute for 3 minutes. Remove and put in bowl.
Add remaining oil and reheat for rippling hot heat. Add beef strips and spread across the skillet, cooking without stirring for one minute. Stir/toss with tongs and spread across the skillet again. Cook for one minute. Be careful not to overcook meat.
Turn down heat to medium. Add sauce and broccoli. Let it cook for 2-3 minutes until fragrant and sauce begins to thicken. If needed, add a little more water or soy sauce per your preference. Be sure to use low sodium soy sauce or your beef will be salty.
Serve with rice or noodles.
