Chicken Fried Rice: Leftovers Redone 27


Have you ever had leftovers sitting in your fridge and you just need something to put them together?  I love this chicken fried rice recipe as it uses up some leftovers and doesn’t taste like “leftovers”.  You know what I mean!

Here is the recipe:

Chicken Fried Rice
A great way to use up a few leftovers in your fridge and still have a yummy meal! You won't feel like you are eating leftovers!

Ingredients
  1. 3-4 cups cooked rice
  2. 1 cup cooked chicken, cubed (use rotisserie or grilled, whatever you have on hand)
  3. 1/4 cup green onion, finely chopped
  4. 4-6 Tbsp. butter
  5. 1 cup frozen veggies (corn, carrots, peas)
Instructions
  1. Melt 3 Tbsp. butter in skillet.
  2. Add onion and chicken.
  3. Cover with rice.
  4. Let rice brown and start to snap. Turn.
  5. Add remaining butter to the top.
  6. Add frozen veggies and continue to fry up and turn the rice.
  7. Cook until veggies are warm.
  8. Salt and pepper to taste.
  9. Serve with soy sauce and whatever else sounds yummy!
Notes
  1. You can add whatever leftover veggies and chicken you want to this dish to make it your own. Be creative!

I love this as it is literally a meal in one.  It tastes yummy and I feel proud for using leftovers!  If you really want, add an egg — just for kicks!!
