These are so good that I put them on my “Joy” plate, because they fill me with joy! This is my mom’s recipe, and I must admit I hardly ever make them, so they are a special treat. My sweet hubby does not eat much cocoa, so I have to plan to give them away or consume them myself (which really isn’t so bad if you don’t think about the calories!). They are delicious, and one of my favorite memories from childhood. My girls always get so excited when I make “Grandma’s Brownies!!” Yum-a-licious!
2 squares margarine/butter (I used butter)
2 cups sugar
scant 1/2 cup cocoa
1 tsp vanilla
1 1/2 cups flour
2-3 cups miniature marshmallows
1/2 cup butter
3 tbsp. cocoa
3-4 cups powdered sugar
2-3 tbsp milk
For brownies: Mix butter and sugar until creamy. Add remaining ingredients, except marshmallows, until blended.
Put in 9×13 pan and cook at 350 degrees 22-27 minutes. Mine took about 25 minutes. A toothpick may not come clean, but the middle will be starting to set. Top with miniature marshmallows and return to over for 3-5 minutes until marshmallows puff and start to brown.
To make frosting: Melt butter and cocoa over stove on medium heat.
Pour into bowl and add powdered sugar and milk. I added about 3 cups powdered sugar and 3 tbsp milk. I wanted the frosting to be thinner to put on top of the marshmallows. Don’t put it on too soon or the marshmallows and the frosting will melt together.
Yummy! Now you can eat them!
