To-Die-For Marshmallow Brownies 1


Brownies 7These are so good that I put them on my “Joy” plate, because they fill me with joy!  This is my mom’s recipe, and I must admit I hardly ever make them, so they are a special treat.  My sweet hubby does not eat much cocoa, so I have to plan to give them away or consume them myself (which really isn’t so bad if you don’t think about the calories!).  They are delicious, and one of my favorite memories from childhood.  My girls always get so excited when I make “Grandma’s Brownies!!”  Yum-a-licious!

Ingredients:

2 squares margarine/butter (I used butter)

2 cups sugar

scant 1/2 cup cocoa

1 tsp vanilla

1 1/2 cups flour

4 eggs

2-3 cups miniature marshmallows

Frosting ingredients:

1/2 cup butter

3 tbsp. cocoa

3-4 cups powdered sugar

2-3 tbsp milk

For brownies: Mix butter and sugar until creamy.  Add remaining ingredients, except marshmallows, until blended.

Brownies 1Brownies 2Put in 9×13 pan and cook at 350 degrees 22-27 minutes.  Mine took about 25 minutes.  A toothpick may not come clean, but the middle will be starting to set.  Top with miniature marshmallows and return to over for 3-5 minutes until marshmallows puff and start to brown.

Brownies 3Brownies 4Pull from oven and allow to cool.

To make frosting: Melt butter and cocoa over stove on medium heat.

Brownies 5Pour into bowl and add powdered sugar and milk.  I added about 3 cups powdered sugar and 3 tbsp milk.  I wanted the frosting to be thinner to put on top of the marshmallows.  Don’t put it on too soon or the marshmallows and the frosting will melt together.

    I am grateful for my only daughter for I can see it is through her that wonderful recipes will be passed down. I believe that her children will also pass them down. Some of my favorite recipes were my mother-in-law. I have a couple of recipe cards in her own handwriting. They are precious to me. It ties is all together in a delicious way and many memories come about that way. Everyone loves my vanilla Ice cream but it really isn’t mine, it is my mother-in-laws recipe. I wonder where she got hers???. I have no doubt that my children will never forget homemade vanilla ice cream and brownies. See what I mean about memories.
