So, I love the throw-it-in-the-pot-and-not-worry-until-dinner kind of meals. This is a tangy, savory dish that hits the spot. Very simple and frugal!
3/4 to 1 pound hamburger
1/2 onion (about 1/3 cup chopped)
1 bottle tomatoes or 24 oz crushed tomatoes
3-4 small potatoes, peeled and cubed
2 cups cut carrots
1 cup corn
1/2 package dry onion soup
2 beef bouillon cubes
Brown hamburger and cook with onion until translucent. Put tomatoes in blender and blend slightly to make crushed. Add all ingredients to crock pot and cook on high 3-4 hours or low 6-8 hours. This has a nice tangy flavor.
