This is my go-to recipe for rolls. I got the recipe from my oh-so-sweet-and-talented sis-in-law, who refuses to be named (you know who you are!) I have done them so many times that it doesn’t seem like a lot of work. They do take time, though. Be prepared to make time for these! They are tender and delicious!
1 Tbsp yeast
2 Tbsp sugar
Add to 1/3 cup lukewarm water and let sit until foamy.
1/2 cup butter
1 cup milk
1/2 cup sugar
1 tsp salt
Add butter, sugar, and salt with 1/2 cup of the milk. Set 1/2 cup milk aside. Put on stove in small saucepan until the butter is melted. Do not boil. Take off stove. Add remaining 1/2 cup milk to cool to lukewarm.
Beat eggs in large bowl. Add lukewarm milk mixture. That is why I reserve 1/2 cup of milk. It ensures that the milk mixture isn’t too hot so it won’t cook the eggs and kill the yeast.
Sift flour and add and mix gently. The flour is measured before sifting. The dough will be sticky. You will notice that the dough starts to pull away from the sides, but it will not be firm. Do not add too much flour or your rolls will be tough.
Let raise for 2-3 hours, until at least double.
Bake at 375 degrees for 10-12 minutes. Eat immediately! They will keep overnight, but my fav is to eat them hot!
