Roasted Broccoli Fries – Seriously?!


I was not sure about this recipe, but really wanted to try it.  I had some broccoli in my fridge that had been calling my name.  This was simple and easy, so…why not!!

I read several recipes (all basically the same idea) and combined them with the ingredients I had on hand.

Ingredients:

2-4 cups broccoli, washed, dried, and cut up

1-2 Tbsp. olive oil

2 cloves fresh garlic, thinly sliced

1/4 tsp. kosher salt

freshly ground pepper

Put broccoli, oil, garlic, and salt into bag and shake up.

Lay out on baking sheet in one layer. Put freshly ground pepper on top.  Bake 425 degrees for 20-25 minutes.

Be prepared for your house to smell yummy!  Almost immediately, I smelled the yummy garlic-roasty smell from the oven.

So, the hints I read up on are the following:

Make sure you dry your broccoli.  This will help it become crispy instead of steamed.

You can add parmesan cheese, but I didn’t have any and, to be honest, it didn’t need any.

As you are roasting, you may want to check and turn occasionally as the broccoli will start to brown.

 

So, the final result?  Yum! It is hard to describe, but they are crunchy and have a beautiful roasted flavor.  Not mushy at all – as some broccoli tends to be. I liked having a slight char on my broccoli, it added to the beautiful flavor.

My husband didn’t even ask where the potatoes were.  And he stated this is his favorite way to do broccoli, better than steamed.  I loved it too and my little ones ate it without batting an eye.  O.K.  one little one batted an eye, but she still ate it. 🙂

There was not one piece of broccoli left at our house!  Now, that is unusual!
