So, I had a conversation with a friend of mine recently about how I cannot cook a cupcake from scratch. Seriously, I can’t. They always end up heavy and more like a corn muffin. I have tried several times, with poor results. I think there are a couple things at play: 1. I am impatient; 2. I don’t always…measure; and 3. I really, really like the ones that come in a package! You know, the ones that you add eggs, oil, water, and throw in the oven?
So, this recipe is not wholly homemade. I used a cake mix! But, it is 100% delicious. We had some neighbor kids over and I handed them out. One little one came up to me about 10 minutes later and said, “Can I have another…cupcake?” I think she was afraid I would say “No!”
The frosting alone is to die for! If you only made that and put in on some graham crackers — yum!
Here are the ingredients for the cake:
Golden Vanilla or French Vanilla cake mix, made according to package directions (Hooray!!)
1/4 cup sugar
1 Tbsp. cinnamon
Scoop cake mixture into cupcake liners and fill about 2/3 way full. Mix cinnamon and sugar together and sprinkle on top of unbaked cupcakes.
Bake according to package directions (See, it is so easy!)
Here is the cupcake without frosting. It is yummy without frosting.
1 cube butter, softened
2 cups powdered sugar
1/8 cup cream (or milk)
1 tsp. vanilla
1/2 Tbsp. cinnamon (I used a little more than that)
Cream butter and add powdered sugar and cinnamon until combined. Add vanilla. Slowly add cream to desired texture. Whip together – the cream makes it extra creamy. If you add milk, I am sure it would work as well. You may just not get as creamy of frosting.
Frost. Use extra cinnamon/sugar to top the frosting. These are so delicious!
Plus, if anyone has some serious tips on how to make homemade cupcakes — feel free to let me know! I may try it out! Probably be unsuccessful, but it never hurts to try something new. 🙂
