Just for fun, we decided to do something for St. Patrick’s Day! There are many different forms of this dessert (you can do it with graham cracker crust, shortbread curst, and different flavor puddings — yummy!), but the green pistachio pudding really makes it perfect for St. Paddy’s Day!
This makes enough for a 9×9 inch pan. If you want a larger pan, double the recipe.
about 15 vanilla cookies with cream centers, crushed (like vanilla Oreos!)
2 Tbsp. butter
1 box pistachio pudding
1 1/2 cups milk
4 oz. cream cheese, softened
1/2 cup powdered sugar
1 small container Cool Whip
Crush up cookies. You may want to sample one or two before you do this…
Melt butter and mix with crushed cookies. Press into bottom of pan or pie plate and refrigerate for about 20-30 minutes.
Mix cream cheese, powdered sugar and 1 cup Cool Whip together until smooth. Layer over the cookie crust.
Mix pudding and milk together until thickened. Pour over cream cheese layer. Top with Cool Whip. Garnish with strawberries. I have heard Leprechauns love strawberries!

My little ones keep telling me that the leprechauns are mischievous. They are the ones leaving socks, crayons, and messes all over the house. I don’t know about these leprechauns!
