So I had some brown bananas hanging out at my house and my little one kept asking for some banana bread. I decided to try something a little different and when I saw I also had strawberries, I thought: banana strawberry bread! I must admit that it turned out better than my banana bread typically turns out! With the streusel topping, it was really delicious!
Here is the recipe:
Strawberry Banana Bread with Streusel Topping
2 1/2 cups flour
3/4 tsp baking soda
1/2 tsp. salt
3/4 cup sugar
5 Tbsp. butter, melted
2 tsp vanilla
2 very ripe bananas, mashed
6 oz vanilla yogurt (one individual sized container)
3/4 cup finely chopped strawberries
2 1/2 Tbsp. flour
1/4 cup sugar
3 Tbsp. butter
Preheat oven to 350 degrees. Mix flour, salt and soda together in a separate bowl. Mix sugar and butter, adding eggs, yogurt, vanilla and bananas until blended. Add flour mixture. Fold in strawberries. Pour into a 9 inch loaf pan (I used an 8 inch, and it made a great loaf, but it was tall in the pan!)
For streusel topping, mix flour and sugar together. Cut in butter until it becomes crumbly. Sprinkle over top of unbaked bread.
Bake at 350 degrees for 60 to 65 minutes. Since I used an 8 inch pan, I baked mine a little bit longer. I also covered my bread for the last half of baking with aluminum foil.
Cool and serve!
I was so pleased that my bread turned out! The streusel topping made a crispy sweet top to this moist bread. The little ones loved it and it stored well for a few days, staying moist and delicious!
