I wish I could tell you where I got the idea for this recipe, but I can’t remember! I just know I was out to eat with my sweet hubby, and I ordered “Western Chicken”. I thought, “I can make this at home!” So, it led to this simply and yummy recipe!!
You really only need four major ingredients, with the addition of salt and pepper. My hubby and kids love this because it has bacon! Who doesn’t like bacon?
Here are the ingredients:
4 chicken breasts
6 pieces bacon – cooked crispy (Reserve 1 tbsp. drippings)
1/2 cup barbeque sauce (We used Sweet Baby Ray’s)
1/2 cup shredded cheese (preferably cheddar or cheddar jack)
Cook bacon until crispy (We like it crispy. If you don’t, then cook to your preference.) Reserve 1 tbsp. drippings.
Salt and pepper the chicken and sear chicken in bacon drippings for about 2- 3 minutes on each side, until slightly browned. You can skip this step, but I think it adds a nice color and flavor to the chicken and seals in the juices as it cooks in the oven.
Put chicken in oven-safe pan, and cover with about 2 tbsp. barbeque sauce, 1 1/2 pieces bacon, and 2 tbsp. grated cheese, in that order. Cover with aluminum foil.
Bake at 350 degrees for about 30 minutes or until done!
Serve with rice or garlic smashed potatoes, and veggies! Yummy!
