Peach Pudding Cake 17


This peach pudding cake is so yummy!! It is a combination of peach cobbler and cake with a delicious sauce.  I got this from a friend, so the recipe is not mine. The directions seem strange, but if you follow them you will get peaches in a delicious almond sauce, topped with cake that is crispy on top and moist in the middle.  Yum!! There are five basic steps to this peach pudding cake: peaches, cake batter, dry mix, water, bake! Here are the ingredients:

Peach Pudding Cake Collage

2 cups sliced peaches

1 tsp. fruit fresh

Slice peaches and put in the bottom of an 8×8 or 9×9 inch greased pan. Sprinkle with fruit fresh.

3/4 cup sugar

1/2 cup milk

4 Tbsp. butter, softened or melted

1 Tbsp. baking powder

1 cup flour

Combine sugar, milk, butter, baking powder and flour.  It will be a thick cake batter mixture.  Spread over peaches.

1/2 cup sugar

1 Tbsp. cornstarch

1/4 tsp. salt

Mix together and sift over batter.

1 cup boiling water

1 tsp. almond extract

Add almond extract to boiling water and pour over cake right before baking. Bake at 325 degrees for 45-50 minutes until cake is golden brown on top. Serve with sweetened whipping cream or ice cream!

Note: Best eaten the same day.  It will keep in the fridge, but the crust will soften overnight.
