Herb Chicken with Pan-Roasted Cherry Tomatoes 25


I am not ready to give up my garden yet, so I am wishing for a little more of the warm weather.  Since tomatoes are so yummy this time of year, I wanted to do herb chicken with cherry tomatoes. Not only is it yummy, but it makes a beautiful dish.  I served mine with a potato and carrot hash and a wedge salad, but I think it would pair beautifully with baked rice and roasted broccoli too.

Even my little ones and hubby will eat this one up.  The basil and garlic pair so nicely with the sweetness of the cherry tomatoes. I think basil is my new favorite herb.  It is so delicious.  My mint is taking over my herb garden, and I don’t have nearly enough mint recipes!! If you have a great mint recipe, send it my way.

Chicken is a staple at our house, and I love to find new ways to serve it.  This herb chicken really pops!

Herb Chicken with Pan Roasted Cherry Tomatoes
A combination of freshness: chicken, basil, cherry tomatoes with a hint of butter and garlic!

Ingredients
  1. 3-4 chicken breasts, seasoned with salt, pepper and oregano
  2. 2-3 Tbsp. oil
  3. 1/4 cup onion, finely chopped
  4. 2 cloves garlic, finely chopped
  5. 1 1/2 to 2 cups cherry tomatoes, halved
  6. 1/4 cup fresh basil, chopped
  7. 1 Tbsp. butter, cold
Instructions
  1. Heat oil in skillet on medium-high heat.
  2. Add seasoned chicken and cook 4-5 minutes on each side until browned.
  3. Turn down heat to medium.
  4. Add onion and cook until it starts to soften.
  5. Add garlic, tomatoes, basil and butter.
  6. Cover and cook until chicken is cooked through, turning once or twice.
  7. In total, you will need to cook chicken about 8-10 minutes on each side, depending on the size of the chicken breasts.
  8. Serve!

    I had a garden but we had to give up on that idea because we rely on well water and it wasn’t a great idea with hot and dry summers. (Never mind the fact that the year I give up turns out to be the rainiest summer ever -.-) We had a lot of things planted, but the thing that went absolutely wild were zucchini. I still have some frozen waiting to be used up! I loved the tomatoes too although kids aren’t big fans, I had mixed luck with bell peppers and no luck at all with broccoli. Cabbage and kale on the other hand were pretty decent and I learned that if if make a cross shaped cut at the bottom that stays in the ground after you pick the cabbage you can get a second “harvest” so to speak!

      Oh, I didn’t know that tip about cabbage. We planted cabbage, but I keep waiting for a head to form. There is a lot of leaves and no real round head of cabbage… I must have done something wrong!
