I have seen these pumpkin chocolate chip cookies several times and once I tasted them I knew I had to try them out at home. You only need three ingredients: that’s right, ladies, three ingredients!
These are so simple, and truly yummy! I have eaten more than my fair share at our house. I love them for two reasons: 1. Who can beat three ingredients?! Right now I need to simplify a little bit, so this was the true winner for me. 2. They really are delicious!
I have seen several variations of this pumpkin chocolate chip cookie. You can eliminate the chocolate chips and just have pumpkin cookies. You can frost them with a cream cheese frosting. You can add M&Ms for a holiday flair. You can even use a chocolate cake mix!
I did use a combination of white and milk chocolate chips because I love both with pumpkin. Here are the secret ingredients:
1 box spice cake mix
15 oz. can pumpkin (small can)
1 cup chocolate chips (of your choosing)
Mix together until combined. Dough will be very sticky.
Heat oven to 350 degrees.
Drop by rounded teaspoons onto greased cookie sheet.
Bake for 12-15 minutes. (I baked mine for about 14 minutes) Allow to sit on warm pan for a few minutes after removing from oven.
